Origin: Two famous areas for the Dolcetto grape, Diano d’Alba and Dogliani.

Type of Soil: Calcareous, chalky soils.

Harvesting Time: Hand-picked grapes, typically in early September.

Winemaking: Stainless Steel Tank Fermentation for 10 to 15 days with the temperature controlled to 26-28° C (78-82 F).

Appearance & color: Brilliantly clear with medium intense ruby with some purple tones when very young.

Nose: Red fruits and berries.

Flavor: Red berries, dry and mildly acidic. Medium to full-bodied.

Alcohol: Typically 12.5% to 13.5%

Food Pairings: First Courses such as Salumi, Carne Cruda, Vitello Tonnato, many pasta dishes, red and white meats.

Serving temperature: 14-18 C° (57-65 F).
